black bean brownies

These brownies are packed full of protein and taste amazing!!  I made them again (updating the pics) and added some nuts... they may be even better this time!

Servings 8-10
Total Time 40 min

  • 1 1/2 cups of cooked black beans (1/2 uncooked/1 can)
  • 3 eggs
  • 3 tablespoons of coconut oil (grapeseed oil may also be used)
  • 1/4 cup of cocoa powder
  • 1 pinch of sea salt (or kosher)
  • 1 teaspoon almond or vanilla extract
  • 1/2 cup of cane sugar
  • 1/2 cup of chocolate chips (I used the Ghirardelli 60% Cacao)
  • almonds or walnuts for topping (optional)


Preheat the oven to 350 degrees F.  Lightly grease an 8x8 square baking dish.

In a large mixing bowl combine the black beans, eggs, oil, cocoa powder, salt, vanilla extract, and sugar.  Blend until smooth using an immersion blender.  If you don't have one of these you can also use a regular blender.

Pour the mixture into the prepared baking dish.  Sprinkle the chocolate chips over the top.  Bake in the preheated oven until the top is dry and the edges start to pull away from the sides of the pan, 25-30 minutes.  (if adding nuts to the top, just add during the last 5 minutes of baking time)
