whole wheat and flax seed pancakes

This recipe features wheat flour, wheat germ, and ground flax seed.  Flax seeds are high in omega-3, lignans, and fiber.  CLICK HERE to read an article about their amazing health benefits!  These pancakes are so delicious and just as healthy! 

Makes approx. 13, 6 inch pancakes
Total Time 25 min

  • 1 1/2 cups whole wheat flour
  • 2/3 cup all-purpose flour
  • 1/3 cup wheat germ
  • 1/4 cup ground flax seed
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 tablespoons brown sugar
  • 1 teaspoon salt
  • 1/4 cup applesauce
  • 2 1/2 cups buttermilk (TIPS AND TRICKS: A substitute for buttermilk)
  • 2 eggs, beaten


 Mix all dry ingredients in a mixing bowl.

Mix the applesauce, eggs, and buttermilk.  Add it slowly, whisking as you go, to the dry mixture.

Heat a cast iron skillet (you can use a non-stick skillet if you don't have one) over medium heat.  Grease the skillet, I always prefer to use butter with pancakes :)

 Pour the batter in the hot skillet and cook until you begin to see bubbles on the surface, then flip, cooking until they are a nice golden brown.
