roasted garlic pasta salad

Yum
 This pasta salad is amazing!!!  Yes I use that word a lot... but this definitely deserves it:)

This recipe features 3 garlic bulbs, but don't be scared away because when roasted they become sweet and soft and lose the bite that raw garlic has.  When the roasted garlic is whipped into the yogurt and ricotta it becomes a dressing to die for and it has unbelievable flavor!

Garlic is so good for you for numerous reasons, here is a run through of some facts:)  It is an immune system booster as well as used to fight chest infections, coughs, and congestion.  Garlic contains high levels of iodine which makes it an effective treatment for thyroid conditions.  Cardiovascular disease can be reduced by ingesting garlic and studies have shown the amazing benefits of taking garlic in relation to heart disease.  Need another reason?:)

INGREDIENTS
  • 3 garlic bulbs
  • Olive oil
  • 1 pound medium pasta shells
  • 15 ounces whole or skim milk ricotta
  • 3/4 cup whole milk yogurt
  • 1 1/4 teaspoon sea salt (or kosher)
  • Freshly ground black pepper
  • 1 pint grape/cherry tomatoes, roughly diced
  • 1 cup black or green olives, sliced
  • 1/3 cup firmly packed cup fresh basil leaves, thinly sliced 


INSTRUCTIONS

Preheat the oven to 400 degrees F. 


Slice the tops off the garlic bulbs. Place in the center of a large square of foil, drizzle with olive oil, and fold to seal.


Place the packet in a baking pan and roast for 40 to 50 minutes, or until the garlic is very soft. Remove, and let cool.

Cook the pasta according to directions. Drain and remove to a large bowl. Toss with a little olive oil, and let cool while making the dressing.


Squeeze the garlic cloves from the bulbs.


Blend the ricotta and yogurt together until smooth, adding in the roasted garlic, salt, and pepper.  Blend until the garlic is well-incorporated.  Season to taste with salt and pepper. 


Pour the ricotta mixture over the pasta and add the tomatoes, olives, and basil. Toss to coat. Taste and season further if needed with salt and pepper.


Serve immediately or chilled. The texture is best when served immediately, but the garlic flavor improves as it sits, so either way it's a WIN WIN:)  Enjoy!!
