ultimate guacamole


Servings 4-6
Total Time  10 minutes

  • 3 ripe avocados
  • 1 ear of corn, kernels removed
  • 2 small tomatoes, diced
  • 1/4 cup chopped red onion
  • 1 1/2 limes, juiced
  • 1/2-3/4 teaspoon of salt
  • 1/2 cup packed chopped cilantro
  • mexican crumbling cheese to serve
  • 1/2-1 jalapeno, seeded and diced (optional)


Halve the avocados, remove the seed, and scoop the flesh into a small bowl.  Using a potato masher, or the back of a spoon, mash the avocado until smooth.  Add the corn, tomatoes, onion, lime juice, salt, and cilantro.  Mix until smooth.  

Serve topped with crumbling cheese.  Enjoy!!!
