creamy avocado cilantro dressing

I wanted a creamy dressing without the dairy, for those of you that are vegan or just can't consume dairy, and created something delicious.  I added some chipotle peppers in adobo sauce for a hint of heat to balance out the bite of the vinegar and coolness of the cilantro.  This dressing makes an easy way to dress up some leaves, tomatoes, and red onion.  Delicious!:)

Servings 1 cup
Total Time 5 minutes

  • 1/2 cup olive oil
  • 1 cup packed cilantro
  • 1/2 avocado
  • 2 tablespoons red wine vinegar
  • 1 tablespoon chipotle peppers in adobo sauce
  • 2 garlic cloves
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar


Combine all ingredients in a blender and blend on high speed for 1-2 minutes until nice and creamy.
