Grocery List- Week 11

Yum
Meals for the week:
-mexican pizza (i'll be making refried beans but you can buy them canned, you will just omit the ingredients with **)
-pasta with broccoli rabe and sun-dried tomatoes
-thai fried rice with tofu

Produce
  • 1 yellow onion**
  • garlic cloves**
  • 1 whole jalapeno**
  • 6 cups spinach
  • 2 medium tomatoes
  • 2 avocados 
  • 1 pound broccoli rabe
  • 7 garlic cloves
  • 1 inch ginger root
  • 1 head bok choy
  • 3 cups green beans
  • 1 lime
  • 1 package original grilled tofu (such as Marjon), just buy regular if grilled isn't available
  • 1/2 cup chopped oil-packed sun-dried tomatoes (or in the canned food aisle)
  • fresh cilantro
Baking/Spices/Nuts
  • 1 teaspoon ground cumin**
  • 1 teaspoon red pepper flakes
  • 1/4 cup pine nuts
  • 1/4 cup flaked sweetened coconut 
  • 1 tablespoon brown sugar
  • 1/4 cup chopped dry-roasted cashews, salted
Dressings/Oils/Vinegars
  • 1/2 cup olive oil**
  • 1/2 cup olive oil 
  • 1 teaspoon red wine vinegar
Ethnic
  • 2 cans refried beans (IF you are not making them... also don't forget to omit the ** ingredients)
  • 1 cup dried pinto beans**
  • 12, 6-7 inch corn tortillas (short on time: buy tostadas)
  • 1 cup of salsa or 1/2 cup sliced pickled jalape├▒os
  • 2 tablespoons soy sauce
Pasta/Rice/Beans/Canned Goods
  • 1 pound pasta, whatever chunky shape you like
  • 4 cups cooked jasmine or basmati rice
Freezer
  •  
Dairy 
  • 8 ounces mexican crumbling cheese
  • 1/4 cup butter
  • 1 cup grated parmesan cheese
  • 1 large egg
