honey and herb roasted potatoes

 What to do when one has lots of fresh herbs to use?  These potatoes are easy easy easy and there are many variations of herbs that you could use depending on what you have on hand.  PLUS they make a great side dish for any meat or seafood you might choose to pair them with.

Servings 4-6
Total Time 40 minutes

  • 3 pounds potatoes, cut into 1/2 inch cubes
  • 1 1/2 tablespoons olive oil 
  • 4 tablespoons minced fresh herb mixture (tarragon, parsley, chives, thyme, oregano, etc.)
  • 1 1/2 tablespoons honey
  • 1 1/2 teaspoons sea salt (or kosher)
  • freshly ground black pepper
  • sour cream or plain greek yogurt to serve


In a large bowl toss all ingredients together until well blended.  

Place the potatoes on a baking sheet in a single layer.  Place the pan 5 inches under the broiler and broil, flipping every 7-8 minutes, for about 30 minutes or until tender.  You can also bake them on 400 degree F, I prefer to broil them because I think they get crispier and then don't get as mushy.

Season with salt and pepper.  Serve with sour cream or plain greek yogurt to dip.  Enjoy!!
