pasta with a light sweet potato cream sauce and kale chips

 This pasta is perfect.  Perfect.  It is creamy with crispy and lightly sweet with slightly salty.  The kale chips and pasta make the perfect pair.  Even my 3 year-old thanked me for making it.  Enough said.


Servings 4-6
Total Time 40 minutes

INGREDIENTS
  • 2 large sweet potatoes, cooked and mashed (about 3 cups)
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 1 small onion, chopped
  • 4 garlic cloves, minced or pressed
  • 2 tablespoons flour
  • 3 cups milk
  • 1 cup freshly grated parmesan cheese + 2 tablespoons
  • 1 pound whole wheat pasta (preferably spaghetti, for gluten-free make sure to choose a gluten-free pasta)
  • 2 bunches of kale, leaves torn from stems (this will seem like a LOT, but trust me... it cooks down)
  • 2 tablespoon toasted sesame oil
  • 1 teaspoon salt
  • 1 teaspoon pepper

INSTRUCTIONS

Preheat oven to 350 degrees F. 


In a large bowl, add kale, sesame oil, 2 tablespoons parmesan cheese, 1/4 teaspoon salt and 1/4 teaspoon pepper. Toss to coat with your hands and massage kale for 1-2 minutes, until flavors are distributed.


 Spread on a baking sheet in a single layer, this may take 2 sheets, and bake for 18-25 minutes, tossing 1-2 times while cooking, until crispy.


Remove and set aside.


Bring pasta water to a boil and cook pasta according to package directions.


While pasta is cooking, heat olive oil and butter oven medium heat in a large skillet. Add in onion and garlic with a pinch of salt, cooking for 4-5 minutes until soft and translucent.


Whisk in flour, whisking constantly to create somewhat of a roux.


Once the roux has turned golden (after 2-3 minutes), add in mashed sweet potato and milk, whisking to combine. It will take a few minutes of whisking to bring the mixture together, and it’s okay if a few small bits of potato remain. Let the mixture come to a simmer in order for it to thicken a bit, but be careful because it thickens quickly. If it becomes too thick, simply add a little milk to thin it out.


 Reduce heat to low and stir in parmesan, remaining salt and pepper.


Once pasta is finished cooking, add noodles directly into the sweet potato sauce.


Top with crispy kale chips and parmesan cheese.  Enjoy!!!
