sun-dried tomato hummus

As I was getting ready for the coming week, chopping vegetables and bagging individual portions of crackers, I decided to make this hummus for the kids wraps and of course mine.:)

I love hummus and this, by far, is my favorite!  Plus it is so easy to make AND who doesn't like a healthy, creamy dip!?:)

Total Time 5 minutes

  • 1 1/2 cups cooked chickpeas (or 15 oz can)
  • 1/4 cup sundried tomatoes (oil packed, drained)
  • 1/4 cup tahini
  • 1 clove garlic
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • sea salt (or kosher)
  • freshly ground black pepper
  • cayenne

Put all ingredients in a blender and blend until smooth.  Add water or oil if a thinner consistency is needed.  Season to taste with salt, pepper, and cayenne.

Serve with pita chips and/or fresh veggies.  Enjoy!!!
