pizza with greens

  Pizza for dinner makes the kids happy and adding the greens makes the adults happy... it's a win win!  Plus it's delicious and makes for a fun family night!

Servings 2 pizzas
Total Time 20 minutes

  • 2 pounds of pizza dough
  • 1, 6 ounce can tomato paste
  • 1 teaspoon ground oregano
  • 5 ounces of feta cheese, crumbled
  • 1 1/3 cup shredded mozzarella cheese
  • 1 cup grated parmesan cheese, plus additional for serving
  • 6 cups salad greens (kale, arugula, spinach, etc.)
  • 1/3 cup chopped fresh parsley
  • 1/2 small red onion, thinly sliced
  • 1/3 cup olive oil
  • 1 lemon, juiced (2 tablespoons)
  • 2 teaspoons dijon mustard


Preheat the oven to 500 degrees F.

Roll out pizza dough, onto a greased pan or parchment paper (paper works the best because when cooked directly on the oven rack with NO pan it still allows the moisture to escape and the bottom will brown), to preferred thickness. Spread with tomato paste and sprinkle with the oregano, feta, and the cheeses.

Bake the pizza for 6-8 minutes (if baking two pizzas at a time rotate them halfway through baking, using a pizza pan to slide them on and off the racks like a huge spatula).  Remove from the oven.  For a crispier crust, remove the pizza from the paper or pan and return to the oven for a couple of minutes.   

Meanwhile, combine the greens, parsley, and onion on a bowl.

In a small bowl whisk together the oil, lemon juice, and mustard.  

Toss the dressing with the greens.

Top the pizzas with the salad and sprinkle with any remaining parmesan.  Season with freshly ground pepper and enjoy!!! 

Note: It's delicious dipped in homemade ranch or sour cream!
