broccoli and squash salad with tahini dressing

 These steamed vegetables make a delicious meal served atop greens and paired with tahini dressing. This salad is simple, fast, and full of flavor!!  It would also make a great side for teriyaki chicken or shrimp!

Servings 4-6 as a main course
Total Time 30 minutes


for salad
  • 1 head broccoli, cut into florets
  • 1/2 delicata or butternut squash, sliced and seeded
  • 4 cups mixed tender greens
  • 1/3 small head red cabbage, 2 cups thinly sliced
  • coarse salt
  • freshly ground black pepper
  • 1 tablespoon toasted sesame seeds

for dressing
  • 1/2 cup tahini
  • 1 lemon, zested and juiced 
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • coarse salt 


Add all the dressing ingredients into a blender and blend on high until smooth.  Set aside.

Steam broccoli florets until bright green and tender, about 4 minutes. Remove and set aside. Steam squash until bright yellow and tender, about 10 minutes. 

To serve layer the greens, cabbage, and top with steamed vegetables.  Season with salt and pepper. 

Drizzle with tahini sauce and sprinkle with sesame seeds.
