mashed parmesan cauliflower

 This delicious side is a fun way to eat cauliflower and especially perfect for those of you loving comfort food, but trying to eat less starches. 

Servings 4-6
Total Time 30 minutes

  • 1 head cauliflower, stem removed and head chopped into florets
  • 1/4 cup vegetable or chicken stock
  • 2 large garlic cloves, peeled and halved
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon course salt, plus more to taste
  • freshly ground black pepper
  • 2 tablespoons cream or milk

In a large sauce pan or skillet, over medium heat, add the cauliflower florets, stock, and garlic cloves.  Cook covered for 20-25 minutes, until very tender.

  Transfer everything to the bowl of a blender or food processor (you can also use an immersion blender). Add the Parmesan, salt, and black pepper to the cauliflower and blend on high until the mixture is smooth, about 1 minute.

Top with extra cheese and chives (optional).  Enjoy!!!
