mini stuffed sweet peppers

These are delicious and easy to prepare for your next holiday party.  Plus, they can be made ahead of time and stored in the refrigerator until you need them.

Servings 30-35 appetizers
Total Time 20 minutes

  • 3 tablespoons chopped walnuts
  • 1 cup cream cheese, at room temperature
  • 3 teaspoons dried cranberries, finely chopped
  • 3 tablespoons green onions, thinly sliced
  • 1/4 teaspoon garlic powder
  • course salt and freshly ground black pepper, to taste
  • basil to serve (optional)
  • 1 pound mini sweet peppers, tops removed, halved, and seeded


In a mixing bowl add the walnuts, cream cheese, cranberries, onions, and garlic.  Stir until well blended.  Season to taste with salt and pepper.

Arrange the peppers on a platter and then fill with the cheese mixture.  An easy way to do this is to use a sandwich bag, fill it with the cheese mixture, snip off the corner, and then pipe it on.  

Sprinkle with basil and chill until ready to serve.  Enjoy!!!
