parmesan baked salmon

Please excuse the picture... there is something about a baked piece of fish with white sauce on it that doesn't want to photography beautifully.  However, this was way to good not to share it.  I love salmon, but I am picky about how it's prepared.  It's not often that I have it and think "now this is good!".  My absolute favorite is maple soy salmon, but sometimes you need options and now I have one!

Servings 4-5
Total Time 25 minutes

  • 1 1/2 pounds salmon filets
  • 1/3 cup plain greek yogurt (can substitute sour cream)
  • 1 1/2 tablespoons chopped fresh parsley, plus some for serving
  • 1/4 cup grated parmesan cheese
  • 2 garlic cloves, minced
  • 1 1/2 tablespoons grated onion
  • course salt
  • freshly ground black pepper

Preheat oven to 350 degrees F.

In a bowl mix the yogurt, parsley, cheese, garlic, onion, and season to taste with salt and pepper.

Spread on top of the salmon.

Bake until the fish flakes, about 15-20 minutes.  Enjoy!!!

  1. I hate when people say they loved a recipe and then say they didn't follow it. Well, today that was me. Hubby really wanted to try Gorgonzola on Salmon, so I used this as a jump off point. Since Gorgonzola is more fat, I didn't use the mayo but everything else. It was wonderful. I really wasn't sure I would like it because the cheese is such a strong taste but they mixed well. Hubby also added some dill on top because he doesn't care for parsley. This with a big green salad was a wonderful meal. Guess I have to change my attitude about people who change recipes.
