Grocery List- Week 23

-baked kale and chicken pasta
-fajita quesadillas served with chips and salsa/guacamole
-slow cooker sweet potato lentil soup served with grilled cheese or a baguette

  • 1 large onion 
  • 7 garlic cloves
  • 2 bunches kale

  • 1 medium onion
  • 1 green bell pepper

  • 2 large sweet potatoes, peeled and cubed

caramel banana whole wheat crepes

This may have happened last night.  Simply put... they were amazing.  

Since we have 3 kids getting out and going on dates doesn't happen often, so we improvise and have dessert and coffee dates at home.  Just the two of us, with peace and quiet.  It's quite wonderful actually.  So last night at 9 pm we found ourselves making crepes.  Then I decided that I also needed to make caramel sauce.  Maybe one of my best cooking decisions yet!

The recipe below is from my blackberries and cream crepes, the only thing we did different is we used whole wheat flour this time (I was out of white) but it didn't change the taste, not that I could have gone wrong in any way using bananas and caramel!

chickpea tikka masala over rice

 I LOVE LOVE LOVE (can you tell that I really mean that) tikka masala.  Probably one of my favorite dishes of all time.  So with that being said... the fact that it can be so simple to make is life changing.  I'm sure that there are more complicated recipes, but this one does the trick and is delicious!!!  Not a vegetarian?  Feel free to add chicken or lamb in place of the chickpeas or right alongside of them if you'd like.

salmon with orange butter sauce

By far my favorite salmon recipe ever.  Ever.  The sauce is to die for and you will find yourself drenching every bite!  The sauce would also be delicious on other kinds of fish, grilled pork chops, or veggies like asparagus.  Try it... you'll LOVE it!

lemon rosemary roasted potatoes

I simply love roasted potatoes and find myself using them as a go to, easy side.  This recipe steps it up a notch and adds lemons and rosemary.  Which, I might add, go beautifully together.  These potatoes would make a wonderful side for almost any meat or seafood, the lemon just seems to go so well with fish that I paired it with salmon with orange butter sauce.

What's for breakfast/brunch/lunch?

Somehow Saturday mornings seem to stretch out forever, just as they should, so I try and make something more substantial for breakfast that will count for all of the above!  Here is one of my favorites and I think it's so good you can eat it anytime of day, especially here in the south where we love our grits!

Grits with rosemary onions and a fried egg... just don't forget the fresh crusty bread!

spicy chipotle beef over grits

 This is spectacular... down home spectacular.  The coolness of the green onions and creaminess of the grits helps to balance out the spicy beef, but this is spicy and perfect for those that love heat!  I am determined to create and find recipes that can be done in a slow cooker and not come out tasting bland and boring.  You all know those recipes... yes great I got to leave it to cook, but the flavor?  Not so much!  So slow cooker lovers... watch for more to come!

chicken with blackberry sauce and whole wheat couscous

This is delicious and had the whole family asking for more, especially the blackberry sauce being a favorite with the kids!  Couscous is always one of my favorites just because it takes 5 minutes to make, and let's be honest... with three kids I'll always take quick!  You could swap out the peas for a different veggie and use almost any nut, including pistachio.

pasta with whiskey and mushrooms

This was pasta has unbelievable flavor, the alcohol mellows as it simmers leaving you with a hint of flavor that will rock your world!  This recipe is simple and quick to prepare but will leaving your guest thinking that you spent hours on dinner.  This is great as a vegetarian pasta, or you can add grilled chicken sliced across the top!

parmesan rice

 This rice is a simple side that can be served with pretty much anything.  The nutty parmesan and the fresh parsley pair well together.  It was a new spin on most Asian rice recipes and will definitely become one of my quick go to sides!

blackened fish

This is my go to fish recipe.  It is quick, easy and can be used on just about any type of fish.   I chose tuna this time and served it with parmesan rice.  I keep the blackening seasoning in my pantry so that I have it on hand.  The recipe makes 1/3 cup so put the extras in an airtight container, and it'll come in handy.

While visiting family over Christmas we went to a small local place to eat, in a neighboring town, called The Black Swan.  I ordered this salad not fully knowing what to expect, but it was amazing.  When I got home I knew I had to recreate it, and here it is... in all it's glory!

cajun chicken fettuccine

 There is something comforting about creamy pasta and freshly made bread, so on one of the coldest days of the year I thought it sounded perfect!  This pasta was amazing.  You can customize the spice according to your preference, the way the recipe is written it is very mild.  Love spice?  Go crazy and add some more cayenne!  Prep was crucial because this recipe moves quickly since you are cooking on high heat, so make sure to have everything chopped and sliced!

banana protein pancakes

I am a big pancake person on Saturday mornings and these are delicious!!!   I have tried different recipes, tweaked others, and finally made this one perfect... at least that's my opinion and I'm sticking to it.  Plus, the protein is an added bonus!
