banana protein pancakes

I am a big pancake person on Saturday mornings and these are delicious!!!   I have tried different recipes, tweaked others, and finally made this one perfect... at least that's my opinion and I'm sticking to it.  Plus, the protein is an added bonus!


Servings- makes 10, 4 inch pancakes
Total Time 25 minutes

INGREDIENTS
  • 3/4 cup old-fashioned oatmeal
  • 1/2 cup vanilla protein powder
  • 1 cup flour
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 1-2 bananas, mashed up
  • 3 eggs
  • 1 cup milk
  • 1 teaspoon butter or neutral oil like grapeseed

INSTRUCTIONS


1.  In a large bowl mix together the dry ingredients.  In a small bowl beat the eggs with the milk and bananas.  Add the wet ingredients to the dry and mix until smooth.

2.  In a large skillet, over medium heat, add a bit of butter or oil.

3.  When the butter is hot pour in the pancakes (about 1/4 cup batter), cooking them a couple minutes per side until they are a nice golden brown. 

4.  Set aside in a warm oven or warming drawer to keep warm until all the batter has been used.  Enjoy!!!
