chickpea tikka masala over rice

 I LOVE LOVE LOVE (can you tell that I really mean that) tikka masala.  Probably one of my favorite dishes of all time.  So with that being said... the fact that it can be so simple to make is life changing.  I'm sure that there are more complicated recipes, but this one does the trick and is delicious!!!  Not a vegetarian?  Feel free to add chicken or lamb in place of the chickpeas or right alongside of them if you'd like.

INGREDIENTS
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 tablespoon garam masala
  • 1 tablespoon tomato paste
  • 2 teaspoon grated fresh ginger (about 2 inches of root)
  • 1 serrano chile, minced
  • 3 cups chickpeas, (2, 15 ounce cans/1 cup dried)
  • 1, 28 ounce can crushed tomatoes
  • 1/2 cup plain greek yogurt
  • 1/4 cup chopped cilantro
  • 4-6 cups cooked rice

INSTRUCTIONS
1.  In a medium skillet, over medium heat, add the olive oil.  When hot add the 
onion and cook for 5 minutes, or until softened. 


2.  Add garam masala, tomato paste, ginger, 
serrano chile, and season with salt (I added 1 teaspoon). 
Cook for an additional minute.

3.  Stir in chickpeas and tomatoes.  Bring to a boil, reduce heat to medium-low, and simmer 15 minutes.

4.  Remove from heat, and stir in yogurt and cilantro.

5.  Serve over rice and sprinkly with cilantro.  Enjoy!!!
