salmon with orange butter sauce


By far my favorite salmon recipe ever.  Ever.  The sauce is to die for and you will find yourself drenching every bite!  The sauce would also be delicious on other kinds of fish, grilled pork chops, or veggies like asparagus.  Try it... you'll LOVE it!

Servings 4-6
Total Time 15 minutes

  • 1 tablespoon olive oil
  • 1/2 cup butter
  • 3 tablespoons orange marmalade (other  fruit preserves will also work like apricot, mango-jalapeno, blackberry, etc.)
  • 1 1/2 tablespoons balsamic vinegar
  • course salt 
  • freshly ground black pepper
  • 1 tablespoon minced parsley 
  • 2-3 pounds of wild caught salmon

1.  Heat a large cast iron skillet, over high heat, and add olive oil.  Season the salmon with salt and pepper.  When the skillet is hot, add the salmon skin side up.  Cook for 2 minutes and then turn the salmon over and cook for an additional minute.  Reduce heat to medium-low, cover and continue cooking for 4-5 minutes, or until the salmon is cooked through. Remove salmon to clean plate.

2.  Meanwhile, in a small sauce pan over medium-low heat, add the butter, marmalade, vinegar, and parsley.  Cook until bubbly and butter is melted, about 2-3 minutes.  Season to taste with salt and pepper.

3.  Top the salmon with the butter sauce and enjoy!!!
