One of my favorites...

This pasta with garlicky greens and capers is one of my absolute favorites!  Plus, it is hotel room approved, which means that it doesn't take a ton of ingredients to prepare and a whole stove worth of pots and pans!  It's a win/win for my 300 sq ft hotel room!

The first time I made this I used a blend of greens, however, after making it again I would recommend using one bunch of kale.  Chop the kale, stalks and all (remember I'm all about ease!), and toss it in with the pasta during it's last 5 minutes of cooking time.  You will then drain it all together, return it to the pot, and toss it with the brown butter.  Amazing.  Simply amazing.

maple soy tempeh bowl


My first recipe from our hotel... I'm really thankful for the grill here because with no oven... things can get tricky.  Unfortunately the lighting here isn't the best (as you can tell) for pictures, and I wish I had flipped my mushrooms onto their side, etc etc etc... because this picture doesn't do it justice.  Unfortunately... there are no do overs!:)

So... as you can see (yes, I brought my juicer and coffee maker) the kitchen is tiny, but at least there is a dishwasher!!!  Now if I can cook in this... you don't have an excuse not too either!;) 

This dish was way to good not to share!  This is perfect for any vegan, vegetarian, or just a Meatless Monday!  With the grilled mushrooms and tempeh, you don't even miss the meat.  You could also use rice, I just happened to have quinoa on hand and don't plan on moving it again;)

skillet lemon chicken with asparagus


Last recipe from my HUGE ;), stocked kitchen...

This meal probably won't win any gourmet contest, but at 7:00 pm after a baseball game... it sure beats a drive-thru!  This recipe cooks quickly, only has 7 ingredients, and uses one skillet.  Pretty sure it's perfect for any busy weeknight!! 

The chicken breast are pounded thin so that they cook quickly, and then the rest of the ingredients go in.  The lemons caramelize on the bottom, steaming the asparagus, and then end up on top the chicken.  Delicious!  Lemon lovers... you are going to be happy!

enchilada bake


Mmmmm.... so good!  I made this for a friend, who just had a baby, and thankfully made one for me too!  It's delicious, versatile, and can be prepped ahead of time!  So, for someone who was packing at the time... a total win!  I served this with chips and salsa, but it would also be delicious with cornbread!

pasta with spinach, feta, and dill


All moved into our hotel room and the verdict is... it may be a long three weeks!;)  The birds are happy, turtle is hungry, kids are SUPER excited which equals hyper, and the dog isn't loving all the strangers on her property (at least that is the way she sees it from our 1st floor windows).  Should be interesting!!

Here is a recipe that I made while we were still living in our house and busy packing.  It is one of those pastas that you can throw together quickly and doesn't have any "crazy" ingredients!

zucchini noodles with avocado and edamame


Ok... so here are the updates...

Our second appraisal was a success on the home we are buying!!  However, we move on Thursday and close on Friday for our current home and won't close until May 15th on the new one.  So, what does a family of 5 with 1 dog, 2 parakeets, 1 turtle (that's another story), and 8 house plants do?  Move to the Marriott!

My husband's father and brother travel a LOT so they have rewards points saved up, and have booked us 21 days at a Residence Inn.  The first week we have a studio and the other two weeks a one bedroom.  So while it is the Marriott... wish me luck.  I do keep reminding myself however, that we will still be living better than 95% of the world even if it is in 400 square feet.  Focus on the pool, focus on the breakfast bar, tennis courts, etc. etc. etc.  My kids think it's like a vacation and are jumping for joy... mommy?  Not so much. 

Anyway, let's get back to food...

This recipe has a new (to me) health star.  Hempseed.  Why didn't I find this earlier?  It is like a tiny nutritional superstar and taste great!  It has a nutty flavor and reminds me of pine nuts, which makes it perfect for pastas, salads, smoothies, you get the idea:)  Plus it is loaded with Omega-3s, minerals, and contains 33% protein by weight. 

This recipe is delicious as a vegetarian dinner.  We had it after a long and crazy weekend, and really wanted something healthy, and light.  However, it would also be great with just about any meat or seafood.

One of my favorite parts... the lemon juice keeps the avocado from browning!  So, it works for leftovers or as a dish for a get together this summer.

vegetable tetrazzini


Chicken Tetrazzini is one of those delicious casseroles that we all grew up eating.  It’s a classic!  A classic that is not horrifying... anyone remember the casserole with cubed ham, peas, and some kind of cream sauce?!

In case you haven’t had Chicken Tetrazzini before, it’s a pasta based casserole with a creamy sauce and chicken.  Sometimes there are mushrooms and some other veggies also. There’s a parmesan and breadcrumb topping, but not much in the way of seasoning. When making a vegetarian Chicken Tetrazzini, that lack of seasoning is an issue, since without the chicken, this casserole is pretty bland. Sometimes making a recipe meatless is just a matter of switching the meat with some other ingredient, but this is not one of those recipes!  So I added some smoked paprika, white wine, and away we go!

Oh, pasta how I love you... obviously right!?  I realized that I have had quite the run of pasta recipes on here lately, and a few more to come.  So if you love pasta you are probably good and if you are trying not to eat it as much or not at all.... I'll get it all balanced out soon.  Especially since grilling season is here, it's time to fire it up!

thai stir fry with coconut sauce over rice


So one of my highlights from Spring Break was driving by the Lodge Cast Iron Outlet Store and getting to stop.  Which, it may not sound like a lot, but with 3 kids and one crazy dog, when all you do is want to get home and out of the car... let's just say my husband is a saint for letting me stop and shop!  I had a few pieces in mind, but ended up with a 14 inch cast iron wok.  Amazing.  Let's just say you may be seeing more stir fry and sauteed veggie recipes!;)  PS if you don't have any cast iron... you don't know what you are missing!!

gnocchi with butternut squash, kale, and fresh sage


So I realize that this may be a bit of an Autumn dish, but I was craving the squash/sage combo (if you haven't had it before you will love it!!), and what better to pair it with than gnocchi?

Gnocchi are dough dumplings made from potato, that originated in Italy.  When cooked they have a very soft texture and go well with just about anything, but the common accompaniments include melted butter with sage, pesto, and various sauces.  Another one of my favorite recipes for gnocchi is gnocchi with spinach and peas in a lemon cream sauce.  I usually serve these pastas with a loaf of crusty Italian bread and a green salad, but a grilled chicken breast would also be delicious.

So... back from Spring Break.... now on to packing.  Talk about going from one extreme to another!:)  We had our first appraisal on the house we are buying and it came back low.  Sound familiar?  So, since she won't take the appraisal amount for the purchase we are switching mortgage companies and getting another appraisal.  Her realtor is paying for it, guess she is that sure of herself, and away we go.  More waiting...

While we are waiting... let's eat!  Here is an Asian noodle dishing using one of my favorite spring veggies.  This recipe uses chicken but tempeh would also be terrific or even tofu, if you are a vegetarian.

slow cooker bbq chicken nachos


Game day food?  Yes please!:)  Here are the chicken nachos that I had mentioned in a previous post, and they were amazing!!!  Best part?  The chicken cooks while you are busy with something else, and then you add a few toppings... and away you go!  They are so versatile and you could also add avocado, sour cream, black beans, spinach, etc.  I think you get the picture!

black bean, corn, and spinach enchiladas with roasted red pepper sauce


Another beautiful day in Georgia... complete with a hike up a creek, rock sliding, and a wet dog!  My husband, of course, is counting down the hours until we eat bbq chicken nachos and watch some basketball, while I am looking forward to the nachos;)  I'll be sharing the recipe soon so watch for it!

We had friends over for dinner last weekend and I made these delicious enchiladas.  They are super easy to make for a crowd, you'll just want to double it, and can be made ahead of time.  Which is always nice so you actually get to visit with your guest, if you are like me you hate having to be stuck in the kitchen while everyone else is having all of the fun.  These would also be great with shredded chicken instead of the beans, or you can do half chicken and half beans.  Also, the sauce is delicious!  Just to warn you... you may want to make some extra!;)

Grocery List- Week 27

Meals for the week:

-zucchini and lemon spaghetti served with a crusty baguette
-blackened fish with avocado corn salsa served with chips and salsa or a veggie
-korean bbq bowl with quinoa

**reminder- the serving suggestions have not been added to the grocery list**

  • 5 medium zucchini
  • 7 garlic cloves
  • 3 teaspoons chopped fresh sage
  • 3 teaspoons chopped fresh rosemary
  • 1 lemon
  • 2 avocados, ripe but firm
  • 1 small red onion
  • 1 ear of corn
  • 2 limes
  • 1 bunch of cilantro (2 tablespoons chopped)
  • 1 bunch green onions
  • 1 inch of ginger root
  • 2-3 broccoli crowns (depending on size)
  • 1 pineapple (1 cup chunks)
  • 1 orange bell pepper (red or yellow will also work... whichever one you like)
  • 1, 15 ounce package extra-firm tofu (or 1 pound of skinless, boneless chicken breast for the korean bbq bowl)
  • 3 cups shredded red cabbage
  • 1/2 cup olive oil
  • 1/2 cup ketchup
  • 1/3 cup rice vinegar
  • 1/3 cup Bragg's Liquid Aminos (tamari or soy sauce will also work)
  • 2 teaspoons tahini (sesame seed paste)
  • 1 teaspoon sriracha
  • 3 tablespoons sesame oil
Pasta/Rice/Beans/Canned Goods
  • 1 pound of pasta, preferably spaghetti (if you are making gluten free, be sure to grab the appropriate pasta) 
  • 2 cups quinoa 

  • 8 ounces feta cheese, crumbled 
  • 1/4 cup grated parmesan or romano cheese, for garnish 
  • 2 -3 pounds fish (I used grouper, but any kind will work)

zucchini and lemon spaghetti


Appraisal day is here!!!  We will know tomorrow if we have a house to move into or not... let's hope for the sake of my three kids and German Shepard that we do!;)  Then... the packing can commence...

This pasta is perfect for summer with the zucchini and hint of lemon.  Grilled fish or chicken, sprinkled with Greek seasoning, would be a perfect compliment to this dish.  You can serve this pasta hot or cold, trust me... my leftovers were cold and were just as good and maybe even better!  Need a dish to take to a picnic and tired of the usual?  Use a smaller noodle (to make it more picnic friendly) like farfalle noodles and there you go!
