squash quinoa-n-cheese


If I were to ask you what was your favorite comfort food I know quite a few of you would have mac-n-cheese on your list.  It is an all time favorite.  Even if you started with the boxed stuff from Kraft, at some point you graduate to the gooey, homemade kind that is to die for.  The kind that always gets finished off at the family dinners.  This dish was inspired by the original, and is a healthy version that is just as delicious!  The fun part?  It even has butternut squash, which is perfect when paired with the nutty quinoa and sharp cheddar cheese.

Servings 6-8
Total Time 40 minutes

  • 1 small butternut squash, peeled, seeded, and cut into 1 inch chunks
  • 1/4 cup milk
  • 4 cups cooked quinoa
  • 8 ounces sharp cheddar cheese, shredded
  • course salt
  • freshly ground black pepper

1.  Preheat oven to 375 degrees F.

2.  In a large pot add water and squash, making sure they are covered by 1 inch.  Bring water to boil and partially cover, cooking for about 20 minutes, or until tender. 

3.  Drain the squash and return to the pot, along with the milk and mustard.  Using an immersion blender (or you can add to a blender), blend on high until smooth and creamy.

4.  Transfer to a bowl and add in quinoa and cheese. Stir until well combined and season with salt.  Spoon into a large baking dish, smooth the top and bake for 20 - 30 minutes, until bubbly.

5.  Sprinkle with salt and pepper.  Enjoy!!!
