cilantro and lime coleslaw

I  am super picky about my coleslaw (trust me I have made several different recipes and this is the first one you are seeing) so I usually prefer to make it instead of buying some at the grocery store.  There are so many variations to this classic dish that no two seem to be the same.  My personal favorite way to eat slaw is on barbeque tacos or sandwiches and this recipe is perfect for that!  The cilantro throws in a southwest taste along with the lime juice, but not so overwhelmingly so that you couldn't take it to your next cookout and eat it with plain burgers and brats.  Make it ahead of time and it will only get better as the flavors come together!

Servings 8-10
Total Time 15 minutes

  • 1, 16 ounce bag shredded coleslaw mix
  • 1 bunch green onions, thinly sliced
  • 1/2 bunch fresh cilantro, roughly chopped
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 1/2 tablespoons sugar
  • 1-2 limes, 1 zested and 1-2 juiced depending on taste
  • course salt
  • freshly ground pepper

1.  In a large bowl combine the coleslaw mixture with the green onions and cilantro.

2.  In a small bowl stir together the sour cream, mayonnaise, sugar, lime zest and juice.

3.  Pour the dressing over the cabbage mixture and toss to combine. Refrigerate until ready to serve.

4.  Enjoy!!!
